CRUNCH KNIVES
Circular knives or machine knives that are applied directly to the material to be cut during the cutting process are called squash knives. Unlike shear cuts, squash knives work with a knife base or counter-roller. Cutting occurs by squashing.
Squash knives can be either circular or flat. Squash knives manufactured as flat knives work with a counter-blade, also called an anvil.
